Wow. This is good. Maybe pretend to your friends you've just been on a foodie cooking road trip to Portlandia and you learned how to make this #nettle #pesto #sunflowerseed .. thing. .. I just made up.
This is a great appetiser and vegan friendly. Nettle is high in protein, vitamin C and iron (and also I just love it so much anyway). Give it a go!
- 'borrow' some nettle from a kind farmers property
- basil pinenut pesto
- red onion
- brown rice
- sunflower seeds
Soak nettles for ten minutes in warm water making sure they are completely submerged and then chop finely. Boil rice and lentils. Chop up onion, mushrooms into very small bits. Drain rice and lentils and mix all ingredients together including sunflower seeds. Arrange in a tree hugging fashion.
