Feel like something warming, cold and flu fighting, grounding and energising for dinner tonight?
Look no further! For the humble pumpkin is in season and provides us with essential vitamins A C and E for building and nourishing our immune systems. Pumpkin is a root vegetable so it pulls energy from our worried heads into the rest of our body, nourishing all cells. Here is my favourite recipe (serves two):
You will need:
one butternut pumpkin
one can coconut milk
two handfuls coriander
half cup water
salt to taste
tamari sauce (about two tablespoons)
Instructions: place diced pumpkin in a saucepan and cover with with water, just enough to cover the pumpkin almost completely. Boil and then mash pumpkin adding to heat one can of coconut milk, half a glass of water, salt, chives and tamari. Bring to almost boil and then simmer adding coriander. Add more water and salt as needed. The nasturtium I added in the above picture is a nice touch ;)
In fact, maybe double the recipe so you and your loved ones can have enough for lunch tomorrow too! It's a favourite for everyone, including kids so no problems with fussy eaters.
